Recipe: Chicken Adobo This dish is a staple of the Filipino kitchen.

Recipe: CHICKEN ADOBO
Categories: Poultry, Phillipines
Yield: 4 servings

2 lb Chicken pieces -cut up or whole
1 t Black pepper, ground
2 C Water
1 Garlic head - coarsely chopped
1/2 C Vinegar (rice vinegar -or white wine vinegar)
4 T Soy sauce
2 Bay leaves
2 T Cooking oil

NOTE: Seasonings and aromatics can be adjusted to taste.

Put vinegar, bay leaves, pepper, soy sauce and water in a saucepan. Cover and cook slowly about 15 minutes.

Meanwhile, heat the cooking oil in a large, heavy-bottomed frying pan. Peel the garlic, break the cloves into chunks and brown them over medium-low

In reference to the assigned essay, Black Men in Public Spaces, I found the writing to be very impressive.  The author has a well adapted and candid feel to his writing that is very comfortable to read.  This technique also the reader to follow the writing smoothly, both visually and verbally.  Your eyes do not get stuck on difficult words or phrases and, when read; the verbiage does not confuse you.

From Behind the Formaldehyde Curtain was quite a particular gruesome essay with the vivid details and crude verbiage when referring to the deceased.  With my wife and I take the same class, we read this essay out loud to each other to save time and help build healthy communication, but I found that my wife was having a bit of a hard time with the subject matter.  After completing the reading I found I have a much stronger understanding to the mortician's occupation.
